Dr. Blau consulted with a registered
dietician to develop nearly 100 easy-to-prepare dishes that capitalize
on the anti-inflammatory properties of a wide range of tasty foods and
spices. Every meal in the plan has high omega-3 content, low
omega-6 content, and an omega-6 to omega-3 ratio below 5 which is key in
reducing the inflammation that is the root of arthritis. Each food
has a low glycemic index, low glycemic load, and is low in sodium and
cholesterol. A powerful weapon against arthritis pain, these
delicious dishes also yield such life-enhancing side effects as lower
cholesterol, reduced blood sugar, and weight loss.
BREAKFAST:
Margaux's Mango and Banana Smoothie
(serves 2)
1 banana
1/2 cup mango
1/2 cup 2% milk
1 tablespoon flaxseed oil
3 ice cubes
Combine all ingredients in a blender.
Mix until smooth.
Note: this smoothie is part of a full
breakfast.
LUNCH:
Grilled Island Shrimp Wrap
(serves 2)
1/2 pound shrimp (cleaned, deveined, tails
removed)
1 tablespoon olive oil
1/2 cup green peppers, diced
1/2 cup snow peas
2 teaspoons fresh chopped cilantro
1 teaspoon curry powder
2 whole wheat tortillas (pre-packaged)
Heat oil in pan.
Sauté green peppers and snow peas until
tender.
Add shrimp, curry powder, and cilantro.
Cook until shrimp are pink.
Divide shrimp into two portions and spread into center of each tortilla.
Fold tortilla into a wrap.
DINNER
Tarragon Lamb Chops
(serves 1)
2 loin lamb chops (free range)
2 cloves garlic, chopped
1/2 teaspoon tarragon
1/4 teaspoon turmeric
Season lamb chops with tarragon, garlic,
and turmeric. Broil until cooked as desired.
EVENING SNACK:
Sliced Peach with Raspberry, Pomegranate, and Ginger Topping
(serves 1)
1 fresh peach, sliced
1 tablespoon topping
Topping (serves 6):
1 cup raspberries
1 tablespoon pomegranate concentrate
1/4 teaspoon fresh ginger, chopped
dash cayenne pepper
1/2 teaspoon honey
Combine all ingredients in a blender.
Strain with colander to remove seeds.
Drizzle 1 tablespoon of topping over freshly sliced peach.
Store the remainder in refrigerator in sealed plastic container.
